Mango Milk Shake and Kulfi

Mango milk shake all set to go!
Spring and summer brings lot of fresh, colorful fruits and vegetables. I try to  get the most out of it. Mango is one of the favorite fruits in this season. My kids love mangoes too. I am going to provide you 2-in-1 recipe so that the kids enjoy the fresh mango milk shake today and the relish the mango kulfi the next day. This is also an instant and quick recipe and here you go.....

Preparation time: 15 min
Serving size: 2 cups juice, 8 small kulfis

Ingredients
  • Mango -  3 (Small size)
  • Milk -  2 cups(Boiled and cooled)
  • Vanilla Ice Cream - 2 scoops (optional)
  • Honey - 3 tbsp
  • Nuts - 1 fistful(about 8 -10 in count)
Get ripe mangoes
Note:
  1. Increase the milk quantity if you don't want the shake to be too thick.
  2. Choose any nut of your choice like cashew, almond, pistachios.....

Preparation
Mango Milk Shake
  1. Grind the nuts half-half and set aside.
  2. Peel off the mango skin.
  3. Cut out all the flesh of the mango and add it to the juicer/blender/mixie.
  4. Make a puree of the cut mango pieces without chunks.
  5. Add the ice cream, milk, honey and blend well for about 2 - 3 minutes.
  6. Fresh mango milk shake is ready to be served.
  7. Blend with milk and honey
  8. Serve 2 glasses of the shake and save rest for the Mango Kulfi.
Note: Optionally you can add the nuts and blend for 15 seconds to get a nutty taste in the milk shake.

  1. Add the coarsely ground nuts to the shake and mix(don't blend).
  2. If your kids don't like the surprise of the nuts when enjoying the kulfi, you can skip the above step.
  3. Pour the shake into Popsicle molds and freeze. I usually freeze overnight.
  4. Depending on the freezer temperature the kulfi should be ready anywhere between 6 - 8 hrs.
  5. Take out from the freezer and keep it outside for 2 minutes or run cold water on the outside. The Kulfi should come out when you rotate and pull or gently tap at the sides of the mold
  6. Surprise your kids with the homemade kulfi.
Note: If you don't have Popsicle molds at home, you can use small stainless steel glass to make the kulfi. After about  1-2 hours of freezing you can insert the kulfi sticks in the middle. If you do it immediately after pouring the shake the stick may go sideways.

The vitamin A in milk also provides good vision. Honey, a natural sweetener, gives instant energy and more stamina. Nuts, rich in dietary fiber, eases constipation.

With summer soon approaching, the smoothies, milk shakes, kulfis are the good option to quench kids' thirst.
