Stuffed Brinjal (Eggplant) Curry


Brinjal Curry Ready to be Served

Generally it is suggested to choose vegetables that have bright colors as they trap more anti-oxidants and nutrients. Very few vegetables have purple/violet color and eggplant(brinjal) is one among them. Brinjal may not be everyone's favorite but this dish could make it to your favorite list.

Ingredients
  • Brinjal - 5 or 6 (small or medium sized)
  • Tomato - 1
  • Peanuts - 1 cup
  • Cumin seeds - 1/2 tsp
    Main ingredients
  • Coconut - 1 tbsp (grated)
  • Fennel seeds - 1/4 tsp
  • Mustard seeds - 1/4 tsp
  • Turmeric powder - 1/4 tsp
  • Dhania powder - 1/2 tsp
  • Red chilli - 3 
  • Ginger - 2 inch piece
  • Garlic - 3 cloves
  • Curry leaves - few
  • Coriander leaves - few strands for garnishing
  • Salt to taste
  • Oil - 5 tsp
Ground stuffing mixture
Preparation
  1. Roast the peanuts, red chilli , ginger and garlic.
  2. Grind the peanuts, red chilli, ginger, garlic, coconut  and required amount of salt(without water) to a fine texture. If it is little bit coarse that's fine too.This is the stuffing mixture.
  3. Slit the brinjal into 4 quadrants deep enough for the stuffing.
  4. Stuff the mixture in the brinjals as shown.
  5. Keep the remaining stuffing to be added during cooking for the gravy.
  6. Slit the brinjal and stuff the mixture
  7. Chop the tomato and set aside.
Cooking
  1. On low heat add oil to a vessel. When the oil is warm add mustard.
  2. Once the mustard splutters add the cumin seeds, fennel seeds and curry leaves.
  3. Add the stuffed brinjals and cook for 5 - 10 minutes.
  4. Saute the brinjals from time to time taking care not to burn it.
  5. Add the chopped tomato and saute until the tomato becomes soft and cooked.
    Cook until the brinjal becomes soft
  6. Add the turmeric powder, dhania powder and the remaining stuffing mixture.
  7. Add salt just enough for the curry since the stuffing already has some salt.
  8. Add 1 1/2 cups of water and cook (10 minutes) until the brinjal becomes soft and oil starts to separate out from the gravy.
  9. Garnish with coriander leaves and serve hot.
