Yummy Poondu Kozhambu |

Ingredients
- Garlic cloves - 25 nos
- Onion - medium size 1/2
- Methi seeds - 3/4 tbsp
- Turmeric - 1/4 tsp
- Tamarind - 1 small lemon size ball
- Chilli-Dhania Powder - 1 tbsp
- Coriander leaves - few strands
- Tomato - 1
- Salt to taste
- Oil - 3 tsp
- Curry leaves - few
- Methi seeds - 1/4 tbsp
- Cumin seeds - 1/2 tsp
- Fennel seeds - 1/4 tsp
- Mustard/Urad Dal mix - 1/2 tsp
- Dry Red Chillies - 2 nos

Garlic is a good antibiotic and increases the immunity of the body. Garlic helps in thinning the blood and so is good for reducing LDL levels. For the nutritional facts of the seasoning spices used refer "Essential Spices for Healthy Cooking". The sulfur content in onion is good for liver and nervous system. Tamarind is good for digestion and works against constipation. Tomatoes are good for strengthening bones.

- Remove the garlic skin (slit them into 2 or 3 if garlic clove is too big).
- Chop the 1/2 onion and tomato and set aside.
- Soak the tamarind in water and extract the juice.(Adjust the size of tamarind ball based on how sour you want the Poondu Kozhambu.
- Dry roast the 3/4 of the Methi seeds and grind it coarsely.

Cooking
- In a vessel heated to low-medium flame, add oil. When the oil is warm add mustard seeds.
- After the mustard seeds pop, add curry leaves and the rest of the ingredients mentioned in seasoning and fry for few seconds.
- Add the chopped onion and garlic and fry until the garlic is half cooked.
- When the garlic is almost light golden brown, add the turmeric powder and the chilli-dhania powder and fry for 10 seconds.
- Take care to not burn the masala. Add the chopped tomato, fry for 30 seconds.
- Pour the tamarind extract, add salt as per need. Add more water if needed and bring to a boil.
- Add the grounded methi seed powder and chopped coriander leaves and let the kozhambu boil for 5 minutes.
- Serve the Poondu Kozhambu with Rice and enjoy!
