Soya Chunk Spinach patties to savor

Ingredients
- Soya chunks - 1 cups(soaked and drained)
- Spinach - 1 cup
- Onion - 1/4(medium size)
- Potato - 1/2 (medium size)
Pulse the soya chunks, mash the potatoes and chop the spinach - Meat/Chicken masala - 1 tsp
- Oil for saute
- Salt to taste
- Boil water along with little bit of milk and soak the soya chunks in it(milk gives fresh soya smell). After 5 - 10 minutes drain the water from the soaked soya chunks.
- You can use garam masala if you don't want to use meat or chicken masala.
- Chop the onions and spinach and set aside.
- Pulse the soaked and drained soya chunks in a mixie/blender.
- Pressure cook the potato for 2 to 3 whistles where it cooks enough to be mashed.
- Mash the potatoes and set aside.
- In a skillet, add 1 tsp of oil and when its warm add the onions and give it a saute until the onions turns golden brown.
- Add the mashed potato, pulsed soya chunks and mix them.
- To the mix add the meat masala until the masala blends with the mix.
- Finally add the spinach and give it a mix so all the ingredients all well mixed.
- Remove from stove and when the mix cools, make lemon size balls.
- Optionally step 1-6 can be skipped and all the ingredients can just be mixed since we are going to shallow fry the patties.
- In a frying pan, add 2 tsp of oil, flatten the balls of soya chunks mix into patties. If needed add oil around the sides.
- Shallow fry the patties for 2 minutes on each side. Flip the patties every minute so that the patties are evenly fried.
- Enjoy the protein rich soya chunk-spinach patties as a snack.
