Ragi Kaara Adai with Drumstick Leaves

Serve the Kaara Adai with chutney or jaggery piece
This is the spicy version of Adai. This is little bit different than the sweet Adai. The variation is the use of drumstick leaves which is rich in vitamins, calcium and iron. We don't have to restrict to just drumstick leaves. We can also use spinach or any other leafy vegetable for this recipe, although drumstick leaves is a perfect match for the Kaara Adai. This is an instant recipe and having Ragi and some leafy vegetable is good enough to make the Adai.

Ragi and drumstick leaves the main ingredients
Mix all the ingredients together with some water


Ingredients
  • Ragi (Finger Millet) - 1 cup
  • Drumstick Leaves - 1 cup
  • Onion - 1/2
  • Green chillies - 1 or 2
  • Cumin seeds - 1/4 tsp
  • Fennel seeds - few
  • Coconut - 3 inch piece(optional)
  • Salt to taste
  • Oil for shallow fry
Make balls out of the dough mix
Preparation:
  1. Separate the drumstick leaves out from its stalk, wash and set aside.
  2. Chop the onions and set aside.
  3. Grate the coconut or cut into small pieces.
  4. Cut the green chilli into small pieces.
  5. Mix all the ingredients along with cumin and fennel seeds.
  6. Add required amount of salt and water and mix to form thick dough.
  7. Flatten the dough ball directly on the frying pan
  8. Divide it into equal parts and form balls with the dough mix.
Cooking:
  1. Heat a frying pan on low heat and add a spoon of oil in the pan.
  2. Flatten the dough ball directly on the frying pan to form a patty. 
  3. Add 1/2 spoon of oil on top of the patty.
  4. Cook covered on both sides for 30 secs. If needed, add oil around the patty. Cover and cook so that the leaves get cooked properly.
  5. Flip the patties at least twice on both the sides so that the patty is well cooked.
  6. Serve hot with jaggery or chutney of your choice.

Ragi is rich in fiber and protein. It's rich iron content helps in blood formation and oxygen transportation throughout the body. Coconut is good for oral health and healthy hair. Drumstick leaves is the "power house of minerals". The vitamin C, vitamin A, potassium and calcium content in the leaves are more compared to that found in oranges, carrot, banana and milk. The Adai is very good for people who are anemic, because vitamin C in the leaves helps in the maximum iron absorption present in the Ragi and drumstick leaves.
