Ragi Sweet Adai or Finger Millet Sweet Patty


Yummy Sweet Adai Ready to Eat !
This recipe is again from my mom's cookbook. If you have 20-30 minutes spare time, this kids snack can be prepared even on a weekday. When my mom made it when she visited me, kids liked it. From then on it became one of my kids' favorite snack and they asked for it referring to it as "brown circle with coconut" :)

Preparation time: 10 min
Cooking time: 10-15 min
Serving size: 4 Adai(Patties)

Ingredients needed
Ingredients
  • Ragi flour - 1 cup
  • Jaggery - 1/4 cup( Increase the amount if you like the patties to be more sweeter)
  • Cardamom - 3 or 4
  • Coconut(grated or chopped) - 1/4 cup 
  • Banana - 1 (optional)
  • Salt - 1 pinch
  • Oil for shallow fry
  • Mix with jaggery water to form dough
    Mix all the ingredients together
Preparation
  • Grate the coconut. If your kids like to bite on coconut pieces(my kids like to) you can cut the coconut into smaller pieces.
  • Since most of the jaggery tend to have fine stones, dissolve the jaggery in very little water so the fine stones sediment at the bottom.
  • Optionally you can roast the ragi flour with a spoon of ghee.
  • Crush the cardamom and set aside.
  • Mix all the ingredients except jaggery, Add the filtered jaggery water to form a dough.
  • Divide it into four equal parts and form balls with the dough mix.
  • Cook on low heat
Note:
  • Since jaggery and banana are added, the mix will be a bit sticky.
  • I added the jaggery directly because the jaggery that I get in US was of good quality with no dirt or stones.
 Cooking
  • Heat a frying pan in low heat and add a spoon of oil in the pan.
  • Flatten the ball directly on the frying pan to form a patty. 
  • Add 1/2 spoon of oil on top of the patty.
  • Cook on both sides for 30 secs. If needed add oil around the patty.
  • Flip the patties at least twice on both the sides so that the patty is well cooked.
  • Flip over and cook
  • Serve hot.......

Cardamom is good for nervous and respiratory systems. It increases blood circulation to lungs and helps relieve asthma.
