Eggless Oatmeal Chocolate Chip Cookie

Oatmeal chocolate chip cookies is a snack that I prepare almost every week. My kids are big fans of these cookies. I have customized the measurements to include less sugar and butter. I include oatmeal, chocolate chips and nuts to get the most nutrition out of it. I had tried making the cookies with egg. But everyone at home prefer the egg-less version. Also some of my friends requested egg-less recipes. I used buttermilk as the egg substitute in the recipe. So here it is...

Ingredients needed

Ingredients
  • All purpose flour - 1 1/2 cups
  • Butter(softened) - 1 stick(4 oz)
  • Oatmeal - 1 cup
  • Nuts(chopped) - 1/2 cup(optional)
  • Buttermilk(Egg substitute) - 1/2 cup
  • Baking powder -1/2 tsp
  • Baking soda - 1/2 tsp
  • Salt - 1/4 tsp(if butter in unsalted)
  • Brown sugar - 1/2 cup (increase/decrease per your taste)
  • White sugar - 1/4 cup(increase/decrease per your taste)
  • Vanilla extract - 2 tsp
  • Cinnamon powder - 1/2 tsp
  • Nutmeg powder - 2 to 3 pinches(optional)
  • Chocolate chips(semi-sweet) - 1 cup(add more if needed)
    Cream together the butter and sugars, add buttermilk and cream till soft and fluffy
    Note:
    • You can be creative and use other ingredients like raisins, M&M and so on....
    • I used less sugar, you can add more sugar as you need.
    • You can also use more butter if you want the cookies to melt in your mouth.
    • Make sure buttermilk is at room temperature.
    • You can use nuts of your choice like cashews, almonds, walnuts, pistachios....
    Preparation
    Mix the flour, oats, nuts and finally the chocolate chips
    1. Preheat oven to 350F.
    2. Cream together the butter and sugars in a big bowl. I use an electric hand mixer to cream together the ingredients.
    3. Add the vanilla essence, baking soda, baking powder, nutmeg powder, cinnamon powder,  salt(if using unsalted butter) and mix.
    4. To the mix, add the butter milk and cream it with the electric hand mixer until the mix turn soft and fluffy.
    5. To the creamed mix, add the all purpose flour, oats and nuts(optional) and give it a mix with the electric hand mixer.
    6. Finally add the chocolate chips and this time mix with spatula to not break the chocolate chips .
    7. Form lemon size balls and flatten using hand(grease with oil if dough is too sticky) and spread on the baking tray which has a parchment paper. You can also use cookie scoop if you don't want to use your hand. My kids like smooth cookies, so I flatten it with hand.
    Bake at 350F for 15-20 minutes
    Cooking
    1. Bake the cookies for 15-20 minutes.
    2. Cool it for 5 minutes before removing the cookies from the baking tray.
    3. For crunchier cookies bake for additional 5 minutes.
    4. Enjoy the cookies with milk or tea.
    5. Pack some cookies as snack to school to see happy kids...

    The advantage of baking cookies at home is that I customize the sugar and butter quantities and I am aware of all the ingredients that I add compared to the store bought cookies. Also homemade cookies are fresh, unlike the store bought cookies. The carbohydrate from all-purpose-flour and sugar will be easily digested by our active kids.

    Lets look at the health benefits of other ingredients used. Oats help to boost our immune system. Rich in dietary fiber, oats prevent constipation. Being a whole grain oats help kids reducing incidence of asthma. Nuts with vitamin E improves the brain health. The magnesium in nuts helps to relax muscles and hence stress. Butter  and buttermilk have vitamin A that improve our eyesight. They also have vitamin K which provides good skin health. Cinnamon prevents bacterial and fungal infections. Semi-sweet chocolate has iron that helps transport oxygen between cells.

    These cookies are not just for kids. If consumed in a moderate amount, adults can also eat it as a snack in the evening. I eat a cookie along with tea to curb my hunger until the dinner.
