Grind the roasted cashews and sugar |
Ingredients
- Cashews - 1 cup (Preferably roasted)
- Sugar - 1/3 cup (you can use 1/2 cup if you want it to be sweeter)
- Cardamom - 2 nos
- Cloves - 1 no
- Ghee(Clarified Butter) - 1 tsp
- Milk - 1 tbsp
- If you do not have roasted cashews, dry roast the cashews for about 5 minutes in low heat. Careful not to over roast and change the color of the cashews.
- Allow it to cool.
- Grind the cashews to fine powder. The ground powder measures a little more than a cup.
- Measure 1 cup and add it to a microwavable glass bowl. Save the remaining cashew powder to be added at the end if the mix becomes thin.
- Grind the sugar, cardamom and clove to fine powder and add it to the bowl.

- Mix the cashew powder and sugar well and microwave at high power for 1 minute.
- Remove from microwave, add ghee, mix and microwave for 30 seconds.
- Remove from microwave, add 1 tbsp milk, mix and microwave for 30 seconds.
- You will see the mix with little bubbles when taken out from microwave.
- Make a ball while it is still warm. Add the remaining cashew powder if the mix is thin.
- When the mixture comes to dough consistency, flatten it smoothly with rolling pin on the rolling board.
- Cut it into diamond shapes or any other shape to fascinate your kid. Let it cool for 2 minutes.
- Enjoy the freshly prepared kaaju katli with your family.

The magnesium in cashews keeps our nerves relaxed and thereby relieving our blood vessel and muscle tension. Cashews are misinterpreted as fatty and full of cholesterol, but its cholesterol free and has heart healthy mono-saturated fat. If you are concerned about the saturated fat in cashews, go moderate. I don't have to wait to buy the Kaaju Katli from stores. When kids ask for it, I can prepare fresh burfi in 20 minutes. Give your kids their favorite diamond sweet and pamper yourself with one too.
Note: It took me atleast 2 - 3 tries before I perfected this recipe. Try to follow the proportion correctly for best results. The microwave power may vary, so don't go beyond 2 1/2 minutes in the microwave.
