Bindi Pyaz or Okra-Onion Fry

Okra is one among very few vegetables that has astringent taste. This taste plays a vital role in the proper functioning of our heart and intestines. Okra is a favorite of everyone in my family so I make it atleast once a week. The taste of onion along with the Okra makes it a uniquely tasting dish. Okra is said to be the beauty secret of Cleopatra! So try it and keep your skin smooth and beautiful :-)

Fresh Okra

Ingredients
  • Okra/Lady's Finger - 1/2kg(1 lb)
  • Onion - 2 (big size)
  • Mustard seeds - 1/4 tsp(with few urad dal)
    Onion and spices
  • Cumin seeds - 1/4 tsp
  • Fennel seeds - 1/4 tsp
  • Chilli Dania powder - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Oil - 5 tsp
  • Curry leaves - few
  • Cashew nuts - few (optional)
  • Salt to taste
 Preparation
Slice onions and cut okra into bigger pieces

  1. Wash and air dry the okra. 
  2. Cut the okra into medium size, about 2 inches.
  3. Slice the onions lengthwise and set aside.
  4. Roast the cashews and set aside.
Cooking
  1. Bring a skillet to warm on medium heat.
  2. Add the cut okras and saute for 2 - 3 minutes. Since no oil is added keep tossing the okra from time to time.
  3. The above step helps to partially cook the okra and also helps to reduce the sliminess when cooking along with the onion.
    Saute without oil
  4. After about 3 minutes, remove the okra and set aside.
  5. Add Okra right after adding onions and saute both
  6. To the skillet add 5 tsp of oil and warm it on medium heat.
  7. When the oil is warm, add the mustard seeds and let it splutter, add the cumin seeds, fennel seeds, curry leaves and saute for 5 seconds.
  8. Add the sliced onions and saute for a minute.
  9. Add the partially cooked okra and cook along with the onions.
  10. Cook the okra for about 5 - 8 minutes or until the okra is 3/4 cooked. From time to time toss the okra in the skillet minimizing the spatula usage to avoid the okra being broken.
  11. After about 5 minutes add salt and saute for another minute.
  12. Add turmeric powder, chilli dania powder and saute for 2 - 3 minutes and remove it from the stove.
  13. Garnish with roasted cashews and serve with Masala Roti or Paneer Fried Rice and enjoy.

Okra helps in binding excess cholesterol and toxins (in bile acids) and helps in excavating them from the body.  It keeps the intestinal tract healthy and feeds the good bacteria in our body. Also Okra is a best summer food to cool off the body. Onion increases the digestive power in the body. Onions are also good for joints, memory and nerves.
