Yummy Paneer Fried Rice for lunch!!! |

Ingredients
- Cooked rice - 1 cup (preferably basmati rice)
- Cooked green peas - 1 tbsp (can use frozen peas)
- Cashews - 5 to 8
- Cumin seeds - 1/2 tsp
Main ingredients - Fennel seeds - few
- Green chilli - 1/2 cut (optional)
- Cloves - 1
- Cinnamon - 1 small stick
- Paneer cubes - 4 or 5
- Coriander - few strands
- Oil to saute
- Salt to taste

- Cut the paneer into smaller cubes.
- Bring stove to low heat. In a skillet add 2 - 3 tsp of oil.
- When the oil is warm add the paneer cubes and saute for about a minute and remove from the skillet.
- Add the cashews and saute for a minute.
- Add the cumin seeds, fennel seeds, clove, cinnamon and peas and saute for 30 seconds.
- Now add the sauteed paneer cubes, cooked rice, salt and fry for a minute.
Saute everything on low heat - Garnish with chopped coriander leaves.
- Optionally you can add 1/2 tsp of ghee when packing the lunch.
Paneer with its high calcium content is good for strong bones and teeth. The protein content in paneer and peas helps in rejuvenating the body cells. Peas also has folic acid good for brain development and fiber that runs the colon smoothly with regularity. The magnesium in cashews helps in soothing the nervous system.
