Pav Bhaji Or Bun with Spicy Mashed Vegetables

Enjoy Hot and Tasty Pav Bhaji!!!
With Pav Bhaji, you can make your kids eat vegetables, without any fuss. It is a colorful mixture of many vegetables. My kids demand this very frequently. This recipe also comes in handy when there are little bit of many leftover vegetables in the fridge. This recipe could differ from the authentic style as I use  more vegetables.  It's a big hit in my house especially because the bhaji is stuffed between hamburger buns and the way it is served(lemon, chopped coriander, onion and butter toasted bun).

Serving size: 4

Ingredients
  • Carrot - 1
  • Beans and Peas - 1 cup
    Vegetables added
  • Potato - 1
  • Cauliflower - 4 or 5 florets
  • Tomato -2
  • Onion - 1
  • Green Bell pepper(Capsicum) - 1/2 or 1
  • Pav Bhaji masala -  2 tbsp
  • Turmeric powder - 1/4 tsp
  • Kasoori Methi - 1/4 tsp(optional but gives added taste)
  • Lemon - 1
  • Coriander - 1/2 bunch
    Masala and garnish ingredients
  • Oil
  • Salt to taste
  • Butter as needed
  • Bun - 8 to 10 buns (depends on size, I use hamburger bun from grocery store)

Preparation
  1. Cut the vegetables into smaller pieces, not very small.
  2. Boil or pressure cook the vegetables with about 1 1/2 cup water. Let it cook for 3 to 5 whistles.
  3. Drain the water(save it for making bhaji) from the steamed vegetables and mash it well.
  4. Chop 1/2 the onion into smaller pieces and set aside.

  5. Chop the capsicum and tomato separately and set aside.
Note:
Step 4 - 5 are done in parallel when the vegetables are being cooked.

Cooking
  1. Bring stove to medium heat. In a skillet bring 4 tsp of oil to warm and add the chopped onions and saute.
  2. When the onion becomes golden brown add the chopped capsicum and saute for a minute.
  3. Add the finely chopped tomato and saute until the tomato is mashed. (The steps 1- 3 can be done in parallel when the vegetables are being pressure cooked to save time.)
  4. When tomato is almost mashed and cooked add the turmeric and pav bhaji masala and fry for 30 seconds.
  5. Add the mashed vegetables puree along with the water that was used to cook the vegetables, salt to taste and cook for 5 - 10 minutes.
    Cooking on low-medium heat enhances the taste
  6. Garnish with coriander(set aside some leaves for serving), kasoori methi and squeeze juice from 1/2 lemon to give a hint of tangy taste to the  bhaji.
  7. Add a spoon of butter and mix with the bhaji.
  8. Turn the heat to low and simmer the bhaji while you prepare the pav or the bun.
  9. Chop the other 1/2 of the onion and coriander leaves.
  10. Bring a pan to low heat. Toast the pav (hamburger bun) after adding a thin layer of butter to the bun.
  11. You can also toast whole wheat slices to eat along with bhaji.
  12. Serve the hot and tasty pav bhaji and relish its taste.
