Mint Pulav - Pudina Rice

Mint Pulav - taste that lingers in your mouth

I had tried making mint pulav in my earlier days of marriage after tasting it in a friend's
house.  But something was missing in the recipe. After  many trial and errors I perfected this recipe. I made it for my sister-in-law's baby shower last year and everyone, including my toughest cousin critics, liked it. From time to time, I make it for my kids' lunch. This year for Navarathiri Bakshanam, it was one of the favored recipe. Since I grow mint in my garden, I picked them fresh for this pulav. So here goes the quick recipe....

Cooking time: 5 - 7 min
Main ingredients - cooked rice is not shown
Serving size: 3 kids lunch boxes

Ingredients
  • Uncooked Basmati rice - 1 cup
  • Fresh mint leaves - 1 cup
  • Frozen/Cooked green peas - 1/4 cup
  • Cinnamon - 1 inch stick
  • Cloves - 2 nos
  • Fennel seeds - 1/4 tsp
  • Cardamom - 1 no
  • Bay leaf  - 1 no
  • Onion - 1/4 of medium size
  • Black pepper - 2 or 3
  • Roasted Cashews - 1 fistful(about 8 -10 nos)
  • Green chilli (optional for spice) - 1 no
    Grind the mint with little water and optional green chilli
  • Ghee - 1 tsp(optional)
  • Oil - 3 tsp (for seasoning)

Preparation
  • Pressure cook the basmati rice with 1 1/2 cup water for 1 whistle on medium heat. Once the rice is cooked spread it on a plate to air dry.
  • Pick out mint leaves from its stem, wash and grind it with green chilli and a little water.
  • Chop the onion and set aside. 
  • If cashews are not already roasted, roast it and set aside.
Note: I usually cook the basmati rice in advance. If rice is ready then the recipe takes only 5 - 7 minutes.


Season with spices, saute onion, add ground mint and saute

Cooking
Add cooked rice and mix, garnish with roasted cashews
  1. Heat oil in a kadai and when it is warm, add the spices and saute for 5 seconds.
  2. Add the chopped onions and saute for a minute or until it turns golden brown.
  3. To the sauteed onion, add the finely ground mint and saute for about a minute.
  4. To the mint add the peas and required amount of salt and saute for another 30 seconds.
  5. Add the cooked rice and mix, check for salt and add if required. 
  6. Optionally add a spoon of ghee and mix.
  7. Finally garnish with roasted cashews and serve.
