Broccoli Cheese Soup

Broccoli is one of the unpopular green vegetable probably because of its unappealing taste. Being used to Indian food taste, getting accustomed to broccoli taste, is difficult. My kids are fans of creamy soups like broccoli cheese soup.We can get loads of nutrients from broccoli and at the same time like the taste of it.  If I could get the creamy consistency of the soup with just milk, without adding creamer or condensed milk then why not prepare their favorite soup at home? With the nutrients available from broccoli, cheese and milk this soup makes a good dinner dish during the winter. Let's see how to prepare this yummy soup....

Main ingredients (use onion of your choice)

Ingredients
  • Broccoli - 1 bunch (medium size)
  • Milk - 2 cups
  • Freshly ground black pepper - 1/2 tsp (increase if needed)
  • Rice flour - 1 tsp
  • Shredded/Grated Cheddar Cheese - 1 cup (increase or decrease per your need)
  • Oil - 3 tsp  
Note:
  • You can use white/red onion, I used green spring onions because I had it in stock.
  • You can also choose to use butter to saute the onion.
Preparation
  1. Chop the broccoli florets into smaller pieces.
  2. Chop the onion.
  3. Shred the cheese, if you don't have shredded cheese.
    Simmer the soup once it boils until broccoli is tender
Cooking
  1. Warm a vessel big enough to hold 6 to 8 cups of water on medium heat.
  2. Add 3 tsp of oil and saute the onions until they become golden brown.
  3. Add the rice flour and mix, to the sauteed onion .
  4. Now add 2 cups of milk, 1 1/2 cups of water, pepper powder and bring it to a boil.
  5. Once the milk boils add the chopped broccoli florets and cook on low-medium heat for 10 minutes. We want the broccoli to be cooked and blended with milk. So allow some extra minutes if needed.
    Remove from stove and add shredded cheese
  6. Remove from stove and immediately add the shredded cheese. Mix the cheese with the broccoli to let it melt in hot soup.
  7. Serve hot with garlic bread and enjoy.
  8. Optionally you can puree the soup in mixie/blender for 10 seconds and then serve. This works if your kids do not like to eat broccoli chunks....

Broccoli has loads of nutrients. It is rich in vitamin C that improves immunity. The vitamin A in broccoli  and milk helps good eye sight. The calcium in broccoli, milk and cheese help in building strong bones and teeth. Being rich in fiber broccoli helps the digestive tract to excrete all the bile acids thus helping to lower bad cholesterol in the body. The vitamin A and K combo in broccoli helps in the maintaining the vitamin D metabolism in the body. Broccoli is also a good detoxifier.
