Ingredients
- Broccoli - 1 bunch (medium size)
- Milk - 2 cups
- Freshly ground black pepper - 1/2 tsp (increase if needed)
- Rice flour - 1 tsp
- Shredded/Grated Cheddar Cheese - 1 cup (increase or decrease per your need)
- Oil - 3 tsp
- You can use white/red onion, I used green spring onions because I had it in stock.
- You can also choose to use butter to saute the onion.
- Chop the broccoli florets into smaller pieces.
- Chop the onion.
- Shred the cheese, if you don't have shredded cheese.
Simmer the soup once it boils until broccoli is tender
- Warm a vessel big enough to hold 6 to 8 cups of water on medium heat.
- Add 3 tsp of oil and saute the onions until they become golden brown.
- Add the rice flour and mix, to the sauteed onion .
- Now add 2 cups of milk, 1 1/2 cups of water, pepper powder and bring it to a boil.
- Once the milk boils add the chopped broccoli florets and cook on low-medium heat for 10 minutes. We want the broccoli to be cooked and blended with milk. So allow some extra minutes if needed.
Remove from stove and add shredded cheese - Remove from stove and immediately add the shredded cheese. Mix the cheese with the broccoli to let it melt in hot soup.
- Serve hot with garlic bread and enjoy.
- Optionally you can puree the soup in mixie/blender for 10 seconds and then serve. This works if your kids do not like to eat broccoli chunks....
